The coffee grind is very important for espresso too, for which the grind has to be very fine. Why?
Because an espresso requires a 16 bar-pressure and because the water passes the coffee rapidly. The coffee has therefore to be well-tamped in order to extract the aromas, which is possible through a very fine grind.
